Seeing Violets

Had used royal icing to cover the cake. It's kind of nice working with Royal Icing, one not being messy and it gives a nice smooth finish.
The violets were hand made with RI too.

Field of Violets - Cupcakes

Simple butter cupcakes, with pastel coloured butter icing. But I think the colours just got darker in time. Hand made the violets with Royal Icing.

What the title means its just that its a chocolate cake layered with chocolate ganache, topped with chocolate ganached and chocolate icing used for the borders. :-)





Ben 10 for Li Jian's 5th B'day

This is the 3rd Ben 10 cake I made. But wanted to try doing a run out of the instead of a pattern transfer onto the cake, which I must admit is quite messy esp when the design is not very big and has lots of colours and shading.
I made 2 run outs, just in case one broke and also to ensure that I captured the right facial expression.
Kind of glad with the turn out. Once the main colours were dry, I painted on the shaded areas and gave the figure some depth.

Baked Cheese Cake

Having a store bought cheese cake is often as waste, as its either too big and you just end up wasting it. Well at least this was what Jivani told me so asked me if I could make one that was not too big. Well this is the usual size I make, weighing about 1kg.




Jivani's comment after eating this was I quote "really the best cheese cake I have ever eaten" unquote.

Then Jivani decided to let her family try this cheese cake and ordered one for her Papa's belated birthday.





Her comment I quote " My dad loved the cake" unquote.

The most important thing to remember when making a cheesecake is to have all the ingredients at room temperature. Beat the cream cheese just until it is creamy and smooth (no lumps) and then add the sugar. Make sure you scrape down the bowl often to remove any lumps and beat at low speed to reduce the amount of air incorporated into the batter. Cheesecakes are baked in a slow oven to prevent cracking and are done when the filling has set. Let cool before covering and placing in the refrigerator.

You may not know that cream cheese is an American invention. Even though cheesecakes have been around since the 15th century it was not until the end of the 19th century that a New York dairy farmer came up with a rich cream based cheese that later became known as Philadelphia Cream Cheese. This creamy smooth, white and spreadable cheese contains at least 33% butterfat with gum arabic added to stabilize and to increase its shelf life. But not all cheesecakes are made with cream cheese. Some are made from cheeses like ricotta, curd cheese, mascarpone, and/or cottage cheese.

Cinnamon on cinnamon

Made a variation of the cinnamon and coffee cupcakes but making a cinnamon glaze instead of the coffee buttercream. I think this is a nice variation, esp for those who love cinnamon. First you get the smell of the cinnamon from the cakes, and then you get to taste its rich taste as you bite into the glaze.

Orange Flavoured Butter Cream & Chocolate Ganache

Simple butter cupcakes with orange flavoured butter cream, topped with RI hand made forget me nots. Chocolate cupcakes topped with chocolate ganache and pipped with pink and yellow rossettes.








Princess Cake

Kamini wanted to surprise her daughter with this princess cake, as Dhivyah loves all the fairy tale princesses and thinks she is one too ...how sweet.
Made the motifs using the run out method and had the features painted on. (still working on that)







Cinnamon & Coffee Cupcakes

Found this recipe online and decide to try it out. Overall, I loved the smell of the cinammon as the cupcakes baked away. Most of them who ate the cupcakes loved it. Guess it all depends if one likes cinnamon or not.
Instant coffee is added to the butter cream for its flavour.





This was what one of my friends who tried the cupcakes had to say. I quote "I am a fan of both cinnamon and coffee.. I must say the combination is very nice.

When you open the box, the coffee would attack your olfactory like a SWAT team. Once that is over (and it may sound a little masochistic, but coffee can attack me anytime!), the gentle but steady breeze of cinnamon soothes your senses.

Just when you think you've had enough, you bite into the yummilicious concoction, and what your nose experienced before, your tongue experiences. The slight bitterness of the coffee takes the edge out of the normally halucination inducing buttercream (though, many a times, sugar high is not a bad thing :P). Many would hate that coffee aftertaste (and smell) in the mouth. Worry not. Cinnamon is here to the rescue.

After you've done devouring the mini sensory bomb (a.k.a cupcake), you're left with a nice lingering smell of cinnamon and a great sense of satisfaction.
